Getting the pickled red cabbage and onions marinated for the chicken burrito bowls for dinner tonight.
My recipe:
2 cups red wine vinegar
1 cup water
1 tbsp oregano
1 tsp red pepper flakes
1 tsp sea salt
1 tbsp brown sugar
2 cloves garlic
1/2 of a red onion
1.5 cups of finely cut red cabbage
Bring vinegar and everything except cabbage and onions to a boil. Pour over red cabbage and onions in a bowl and let sit until completely cool. Drain and store marinade in an air right container for later use, stores for up to two weeks. Cover marinated cabbage and onions in the fridge until ready to serve.
